Hello my name is…Franky Surroca.
I’m here because I am passionate about helping other regular people that are in the occupation of providing service, notably in Food & Beverage. That includes Attendants, Servants, Butlers, Stewards, bartenders, baristas, busboys but most importantly Servers, Waiters, Waitresses, or just entering the customer service industry in general. To overcome the fear and disappointment of not being successful in making the most money out of your job that you know is possible. To overcome the pain of not being able to provide that unforgettable experience to your guests that just fills you with such an unparalleled sense of gratification. To conquer the fear of failure that paralyzes you from being the best version of yourself to the public. Fear of imposing your personality a bit too much. Fear of criticism. Losing your job and getting fired, Facing embarrassment at your job for not knowing common customer service/F&B server knowledge. Feeling limited in your job like there’s a ceiling on how much you tend to make. Not Receiving that recognition and respect that you deserve. The list goes on.
I know what it is like to work your ass off, be stuck in the weeds, get slammed and still muster enough to go all out for your guests just to hear the response “is the service charge included?.” Or how about even worse to not even get the decency of a thank you, just a cross-off at the tip amount and a smile as they leave the table if you’re lucky. I know what it’s like to be questioned on the spot by a customer and not be able to provide a precise answer just a vague response hoping they don’t ask any more questions about the menu or the wines. Always thinking to myself why people are so “cheap” but at the same time enviously wondering how the other servers are able to get $20, $40, $50, & $100+ in tips on a consistent basis.
That is why I am here, to help you to develop into a ServerPreneur, which will expand your mentality, have you thinking outside the box and look at your job in a way you’ve never imagined before opening more doors then you can fathom right underneath your nose. Transcend your tips and sales, becoming top seller out of all your colleagues on the regular while leaving with your pockets full of cash and your over-tip through the roof! Build rapport and a connection with the guest in a small amount of time. This allows you to cover more ground and get to more guests within that time, furthermore increasing your connections with said guests which in turn amplifies your odds of them enjoying your service, ultimately growing your chances of them leaving you a larger tip or becoming a future network connection at worst. Receive guest comments and/or reviews from customers praising you, Network and link up with valuable people that you meet all while participating & providing a delectably gratifying experience to the world!
It wasn’t long ago that I was someone who didn’t know absolutely anything about food & beverage. I was clueless when it came to suggestive selling, alcohols, cocktails, different wines, what entrees pair well with what drinks, proper appetizing verbiage. This was all gibberish to me. I was constantly criticized and looked down upon for not having any prior server experience to getting hired. I would practically have to plead to be given an opportunity to prove myself.
Then I discovered a way to network with other wise servers and customer service representatives that have been in the business for a lifetime. Using their knowledge along with certain techniques I’ve discovered how to increase my ability to retain knowledge on the topic, and was able to completely surprise the doubters and make everyone a believer. Having a significant boost in sales along with a large increase in tips received. I’ve learned the most effective ways to be a very attentive, efficient, and proactive server. I also mastered how to build my regulars and “fans” that always come by to ask for me specifically. It’s defiantly a feeling of euphoria looking back at such a drastic change that has happened due to the information I was able to learn from great minds, veterans, and just plain trial and error.
It hasn’t always been easy. I have run into many problems like being on the verge of getting fired just for the sake of experimenting what works and what doesn’t with the customers. I’ve probably crossed the line more than a dozen times just to push the interaction and find out how far are the limits of acceptability. All for the sake of discovering the proper boundaries I can work within & building those reference experiences that build future confidence to execute in crucial moments to increase that customer experience that I normally would be hesitant in doing. I have reached rock bottom where I was surviving literally off my tips at one point. I knew I had to figure this out, with no other route for me to make income I knew this was achievable but at the expense of some cringe worthy hit and miss experimentation. I’ve been critiqued, embarrassed, ridiculed, threatened, you name it.
Now I am proud to say I am no longer a Food & Beverage server but graduated into a Food & Beverage Consultant. I’ve reached the level of ultimate fine dining stimulus adviser. You can pretty much call me your tour guide towards a delectably gratifying experience. I’ve now looked at the bigger picture and acknowledged the fact that we servers are the most important role being the central point hub between the customer and the services provided by the restaurant. I now currently constantly embrace initiative, assist others, place smiles on people’s faces, become polarizing to my guests providing an experience to my customers. Offering an unforgettable experience for the guest while being compensated accordingly (tips).
